Why cherry

Cherry is a light pinkish-brown that deepens to a rich reddish-brown with age and light. It is a smooth, tight-grained American hardwood that looks richer every year you use it. At 950 lbf on the Janka hardness scale, it is firm enough for daily chopping and easy on your knife edge.
