End grain or edge grain?

This affects durability, price, and minimum thickness.

Edge grain Less expensive but doesn't hold up against knives as well. Minimum thickness: 1.5"

End grain Uses more wood, needs more thickness for stability, resists knife marks and is much more reliable long term. Minimum thickness: 2"
